Indian Salad

  • 3 large tomatoes, peeled, seeded and chopped
  • 1 bunch green onions, finely chopped
  • 1 cucumber, peeled, seeded and finely chopped
  • 1 bunch cilantro chopped
  • 1 TBSP freshly grated/ or ground ginger
  • 1 jalapeno pepper, seeded and chopped
  • juice of 2 lemons

Mix all ingredients. Cover and refrigerate for several hours. Serve on lettuce leaves or as an accompaniment to Indian dishes.
